Experiment with mint to make mojitos

Find yourself a shady deck and cozy chair to sip this refreshing summer drink

Makes 1 cocktail

With so many varieties of mint available today—pineapple, chocolate, lemon—experiment to find your favourite for this classic refresher.

2     sprigs fresh mint leaves
2     tsp. (10 mL) light brown sugar
2     tsp. (10 mL) freshly squeezed lime juice
2     oz. (60 mL) white or light rum
3     oz. (90 mL) sparkling mineral water or club soda

In a highball glass, add mint, sugar and lime juice. Using a long spoon or pestle, crush leaves against the side of the glass to release their flavour.

Fill glass with lots of crushed ice. Pour in rum and top up with mineral water. Garnish with a slice of lime and more fresh mint, if desired.
