Spice things up with chickpea recipes

Healthful and full-flavoured, these beans are easy to grow and even easier to eat.

Cooking dried chickpeas

  • Generously cover 1 cup (250 mL) dried chickpeas with water and soak overnight in the refrigerator or for a few hours at room temperature.
  • Drain, then place in a large saucepan and cover with water.
  • Bring to a boil, reduce heat, cover and cook gently for 1 to 1½ hours or until very tender.
  • Drain well.
