Cooking dried chickpeas

- Generously cover 1 cup (250 mL) dried chickpeas with water and soak overnight in the refrigerator or for a few hours at room temperature.
- Drain, then place in a large saucepan and cover with water.
- Bring to a boil, reduce heat, cover and cook gently for 1 to 1½ hours or until very tender.
- Drain well.
