Five ways to eat green asparagus

Get your fill of this spring treat by preparing it in a variety of ways


Prosciutto-wrapped asparagus
  • 12 asparagus spears
  • 2 tsp olive oil
  • Pinch each salt and pepper
  • 6 thin slices of prosciutto, cut in half
  • 2 tsp lemon juice

Preparation
Heat barbecue (or indoor grill) to medium high heat. Drizzle a little olive oil on the asparagus and season with salt and pepper. Grill for about 2 minutes. Remove from the heat and tightly wrap the prosciutto around the stems as soon as the asparagus is cool enough to handle.

Grill for an additional 2 to 4 minutes until asparagus is tender crisp and prosciutto is crispy. Drizzle with the lemon juice and serve warm or at room temperature.
