plants going to seed
I work away and often when I come home many of my edible plants have flowered and `gone to seed`. I'm not sure what to do at this stage. Many have `bolted` towards the sun...can I deflower them and keep the seeds?

Absolutely you can keep the seeds!
Most of your edibles that have gone to seed will have become woody and bitter anyway!
