Veggies indoors?

Veggies indoors?
I wonder if I could get more use out of my grow lights more than once a year? Has anyone ever tried doing vegetables inside? I'm thinking of things like lettuce, carrots - things that don't need to be pollinated. Has anyone ever tried this?

I have done it but you will find it costly with power hikes
I found roots veggies didd not do well at all
Lettuce, spinach, chard, leafy veggiies do ok and herbs but that's about it
I did plant carrots beets in a deep box of soil but it is not worth it and they did not develope the roots properly and I sur didn't like my power bill
BTW lettcue does just as well on a windowsill if not better
