Beets left in the ground

I don't have time to pickle them for a week or two

Will they be ok left in the ground til I do and for how long can they be left?

Beets, like carrots can be left in the ground until very late.

I would think they would be okay for a couple of more weeks. They can go woody if they grow too much. Last year I did my beets quite late and they got chewed on by what I suspect were mice.
