LYN - Chocklit Fudge Cake Receipt

LYN - Chocklit Fudge Cake Receipt

1 3/4 cups all-purpose flour
1 cup less 1 tbsp unsweetened cocoa powder
1 1/4 tsp baking soda
1/8tsp salt
3/4 cup butter, softened
2/3 cup granulated sugar
2/3 cup packed brown sugar
2 large eggs
2 tsp vanilla extract
1 1/2 cups buttermilk (I also use reg milk)

Preheat oven to 350F. Line bottoms of 2 9" round cake pans with waxed paper. Grease bottom and sides, dust with flour

Mix dry ingredients. In another bowl, beat butter, sugars at med speed until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla.

At low speed, alternately beat flour mixture and mild into butter mixture just untill blended. Divide batter equally between pans. Bake 25 to 30 minutes, until toothpick comes out clean.

Cool.

Icing (This is my mom's receipt, and it is made by memory not a receipt so it may not be exact!! )

about 1/2 cup butter
@ 3 tbsp cocoa powder
@1 cup icing sugar
1 tsp vanilla
2 tbsp water

Cream butter, add cocoa, mix through. Add vanilla and water, mixing till smooth. Stir in icing sugar bits at a time, until smooth and stiff.

I will then taste test for the proper chocklity taste and add more cocoa or icing sugar as needed...if too stiff, just add a drop more water.

I just love chocolate cake,haven't had any in years. . . I don't bake.My favourite way to have chocolate cake is with cherry pie filling and whipped cream instead of frosting.

I may just make this . . it sounds so good.

Oooh Laura! Good idea. I've got many jars of jam in my fridge that are not being eaten, I'll use some between the layers....

I like this recipe too, thank you!....I usually make choc cake with sour cream (and butter), but that makes it just toooo rich.
