First time for me to make this dish which took most of the morning. I used eggplant, taters tomatoes, onions, peppers & herbs from our garden. I served it with a garden salsa.
Jeanne thought it was good but I found it lacking & not worth the effort.

Needed some fresh chillies I suspect Ron! laf!
I did beef filet, sprouts, oven potato wedges, fresh tom salad. Too much food, but I'll use up the leftover beef in a salad tomorrow.
