Just to tease Marc,,,,here is the blueberry pie before we cut into it. There is not much left. As for apples, I liked the Yellow Trasparent Harvert apples the best for sauce but they are no longer available. Mutsa are the next best. I would not use yellow delicious for baking, they are OK for eating. Macs Spys, and several others that are mentioned here are good eating, cooking and baking.
Now Marc, if you are going to make a pie you will need a good pastry recipe.
here is the one I use....never fail
1 1/2 cups pastry flour
1 teaspoon sugar (optinal)
dash of salt
1/2 cup canola oil
3 tablespoons milk
Pour flour , salt and sugar if used into pie plate. Mix oil and milk together. Pour over flour and mix with a fork then use your hand , the more you work it the nicer it gets. Press and shape into pie pan. Its SO easy!!
Depending what size pie pan you use you will have some pastry left. Thats what I use for the lattice top. I put the pastry between wax paper and roll with a rolling pin then cut into strips. Good Luck "Marc"

A neighbour bought & planted a Mutsu & for years it never produced. I took a cutting from her barren tree & grafted it onto one of my trees & one year later it produced fruit & has done so ever since. Nice thing is, that even though other apples get scab this one is very resistant. To my knowledge, her tree never produced - they moved away & we do not know the other folks.

I'm sure glad I have a cover on my keyboard. I drooled all over it looking at Big Smiles blueberry pie.
It's not fair .. All you lovely pie making gals are much too far away for me to happen to drop by just as dessert is being served.
I'm curious .. Can I get away with using all purpose flour instead of pastry flour to try to make the pie crust?

Yes you can use all purpose flour but I prefer pastry flour.

Dave, if you use pastry flour, it will be much more tender...the problem is that it is also harder to roll out compared to regular all purpose. I usually go half and half. I don't use the oil pastry recipe that Clara uses...mine is made in a food processor using butter and lard.

A dutch topping is an open topped pie with a crisp topping.
Pie
2lbs tart cooking apples peeled and sliced
1 tbsp lemon juice
2 tbsp flour
3/4 cup granulated sugar
1 tsp cinnamon
Topping
2/3 cup all purpose flour
1/3 cup brown sugar
1/3 cup butter or margarine(cold)
Pastry
3 cups flour
2tsp sugar
6 tsp baking powder
1 tsp salt
Mix well, cut in 3/4 cup shortening and then add
1 1/4 cups milk
Knead well. Roll out (makes five crusts)
I do 5 pies at one time in a very large bowl. Only 3 times the topping needed for 5 pies.
Bake at 400 for 40 to 45 minutes.
