Results of the Jam taste test (all here agreed on the same order).
From best to worse:
1. Liquid pectin. Best tasting. <-- Kid approved
2. The regular crystal pectin.
3. The Freezer pectin.
The freezer pectin recipe is the one with the least amount of sugar, yet it's the one with the sweetest taste to it. It's very sweet and this is reduced sugar... Go figure.
Pectin makes a huge difference. I didn't know this.

Just wanted to add to this...
The freezer jam, per the kids, has changed taste over the paste couple of days in the fridge.
They have now placed this one #1.
So if anyone does jam for the first time and reads this, the Freezer jam (which isn't boiled like the others) seems to take a couple of days for the flavour to come out. I noticed it as well.

I agree, Marc, freezer jam is our most loved jam style in this family. We never cook jam!
