One of the women staying here this week did just that, added more garlic. It's a bit better but still, blah. Something missing.

One recipe I saw for tzatziki mentioned a splash of ouzo in it.
Depends on what you feel is missing .. Bite ? .. a little flavoured vinegar , extra garlic, of the Ouzo all could perk it up more.. I prefer it well garliced and dilled, but maybe the Ouzo is what you crave.. Not me though .. I am not a fan of licorice or anise, but others love it .

ouzo? heh Dunno. Maybe it's the greek yogurt that makes it off?

The greek yogurt should be fine. I don't think that's the problem. Play around with the recipe and try a dash of cayenne. That might be what you want.

I made Tzatziki yesterday.
I used No Fat Greek Yogurt. Even though it was thick I still let it strain for a couple of hours and a fair amount of liquid came out of it.
When I grated up the cucumber I put a little salt on and let that drain too! A lot of liquid came out of the cucumber.
The recipe I used had lemon juice, lemon zest, lots of garlic, s & p, (I cut the salt in half though as I felt it was a bit too much - it's always easier to add salt at the end because you can't take it out!), chopped fresh dill and a little olive oil.

Of course I tasted it immediately, but it was fairly bland. I covered it and put in the fridge.

Today, for lunch, we had grilled chicken breast and veggies in a pita, with the Tzatsiki to accompany it.

It was so much better today, still mild, but very tasty. I'm glad I only used half the salt though, because it was quite salty enough.

It reminds me very much of the accompaniment to spicy Indian food - Raita, which is also yoghurt and cucumber, but not dill.
